teriyaki salmon

This is an amazing salmon recipe, simple and delicious!

boneless salmon ( I use boneless and skinless)
Your favorite steamed vegetables for side
1 c. soy sauce
1/2 c. sugar
2 tbsp. ginger, freshly shredded
2 tbsp. Mirin (Japanese rice wine)
1 clove garlic, minced

Preheat oven to 350 F. Place salmon fillets into greased baking dish. Combine last 5 ingredients into mixing bowl, whisk until sugar dissolves. Pour glaze over fillets. Cover baking dish with foil and bake 15-20 minutes depending on how thick your salmon is (Should be flaky but very moist and tender). When cooked thoroughly, let salmon sit for 5 minutes to lock in moisture and flavor. Use remaining glaze as gravy. Serve with steamed rice, brown rice, steamed vegetables or salad.
Serves 2-6
